Ingredients
  

For the Marinade
  • 2 tablespoons olive oil
  • 2 limes juiced
  • 1 tablespoon ground cumin
  • 1 teaspoon paprika
  • 2 cloves garlic, minced
  • Salt and pepper to taste
For the Skewers
  • 1 lb chicken breast, cubed
  • Skewers (wooden or metal) If using wooden skewers, soak them in water for 30 minutes

Method
 

Marinade Preparation
  1. In a bowl, mix olive oil, lime juice, cumin, paprika, garlic, salt, and pepper to create the marinade.
  2. Add the cubed chicken to the marinade, ensuring all pieces are well-coated. Let marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
Grilling
  1. Preheat the grill to medium-high heat.
  2. Thread the marinated chicken onto the skewers.
  3. Grill the skewers for 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

Notes

The skewers are best served hot off the grill with lime wedges and cilantro. Pair with rice, salad, or grilled vegetables. Dipping sauces like Aji Verde are a great addition.
