Ingredients
  

For the Slaw
  • 2 cups shredded cabbage
  • 1 cup shredded carrots
  • 1 ripe mango, diced Use a ripe mango for the best sweetness.
  • 1/4 cup diced red onion
  • 1/4 cup fresh cilantro, chopped Can substitute with mint for a different flavor.
For the Dressing
  • Juice of 2 limes lime juice Adjust based on taste preference.
  • 2 tablespoons olive oil Adjust based on taste preference.
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, combine the shredded cabbage, shredded carrots, diced mango, diced red onion, and chopped cilantro.
  2. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
  3. Pour the dressing over the slaw mixture and toss to combine.
  4. Allow to chill for at least 30 minutes before serving.

Notes

Serve chilled or at room temperature. Pairs well with grilled fish or chicken. Store leftovers in an airtight container and consume within 2-3 days for optimal freshness.
