Ingredients
  

For the Skewers
  • 2 pieces chicken breasts, cubed Use your favorite BBQ sauce for added flavor.
  • 1 piece bell pepper, chopped Cut into similar size as chicken for even cooking.
  • 1 piece red onion, chopped Cut into similar size as chicken for even cooking.
  • 1 piece zucchini, sliced Cut into similar size as chicken for even cooking.
  • 1 cup cherry tomatoes
  • 2 tablespoons BBQ sauce
  • 4 cups mixed salad greens
  • 1/4 cup bistro-style dressing Add just before serving for freshness.
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat the grill to medium-high heat.
  2. In a bowl, toss the chicken cubes with BBQ sauce, salt, and pepper.
  3. Thread chicken, bell pepper, onion, zucchini, and cherry tomatoes onto skewers.
Grilling
  1. Grill skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through.
Serving
  1. In a serving bowl, place mixed salad greens.
  2. Top with grilled skewers and drizzle with bistro-style dressing.
  3. Serve immediately and enjoy!

Notes

Store leftovers in an airtight container without dressing in the fridge. Grilled skewers can be stored separately and are good for up to two days. Assemble the salad fresh before eating for best flavor. Consider soaking wooden skewers in water for 30 minutes before grilling to prevent burning.
