Cooking Steps
  1. Heat a large skillet over medium heat and add a drizzle of olive oil.
  2. Once the oil is shimmering, add the chopped onion and bell pepper. Sauté for about 3-4 minutes until they start to soften.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the ground turkey to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes, making sure it’s no longer pink.
  5. Toss in the diced zucchini, Italian seasoning, salt, and pepper. Stir well to combine.
  6. Cook for an additional 5-7 minutes, or until the zucchini is tender but still has a bit of crunch.
  7. Once everything is cooked, remove from heat, and sprinkle with fresh parsley. Give it one final stir, and you’re ready to serve!
