  • 2 cloves garlic, minced

  • 1 cup heavy cream Substitute with half-and-half or whole milk if needed.
  • 16 oz package gnocchi Store-bought gnocchi works perfectly.
  • 1 cup shredded cheddar cheese Garnish with extra cheese if desired.
  • 2 cups spinach Feel free to add other vegetables like carrots or peas.
  • to taste Salt and pepper

  1. In a large pot, heat olive oil over medium heat.
  2. Add the diced onion and minced garlic, and sauté until the onion is translucent.
  3. Add the ground turkey and cook until it is browned.
  4. Pour in the chicken broth and bring it to a simmer.
  5. Stir in the gnocchi and cook according to package instructions.
  6. Once the gnocchi is tender, add the heavy cream and cheddar cheese, stirring until they melt together.
  7. Finally, add the spinach and cook until it wilts.
  8. Season with salt and pepper to taste.
  9. Serve warm.

Notes

Serve hot in bowls. Garnish with extra cheddar cheese or fresh herbs like parsley or basil. This soup pairs well with crusty bread or a simple green salad. If you have leftovers, let the soup cool completely and store in an airtight container in the refrigerator for up to three days. You can also freeze it, leaving space in the container for expansion.
