Ingredients
  

Marinade Ingredients
  • 1 lb chicken breast, cut into cubes
  • 1 cup coconut cream Can substitute with canned coconut milk for a lighter flavor.
  • 2 tablespoons ginger, minced
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon lime juice
  • Skewers (wooden or metal) Soak wooden skewers in water for 30 minutes before grilling.
For Serving
  • Peanut sauce For serving on the side.

Method
 

Preparation
  1. In a bowl, combine coconut cream, ginger, garlic, soy sauce, brown sugar, and lime juice.
  2. Add the chicken cubes and marinate for at least 30 minutes.
Grilling
  1. Preheat the grill to medium-high heat.
  2. Thread the marinated chicken onto skewers.
  3. Grill skewers for about 5-7 minutes on each side or until fully cooked.
  4. Brush with extra coconut glaze while grilling for added flavor.
Serving
  1. Serve hot off the grill with peanut sauce on the side.

Notes

For extra flavor, add lime zest to the marinade. Feel free to include vegetables like bell peppers or onions on the skewers for added nutrition and color.
