Preparation
- Preheat your oven to 425°F (220°C).
- Wash and peel the sweet potatoes, then cut them into even-sized fries.
Cooking the Fries
- In a large bowl, toss the sweet potato fries with olive oil, paprika, garlic powder, and salt until well coated.
- Spread the fries in a single layer on a baking sheet lined with parchment paper.
- Bake for about 25-30 minutes, flipping halfway through, until they’re crispy and golden.
Making the Guacamole
- While the fries are baking, mash the avocado in a bowl.
- Add lime juice, salt, chopped cilantro, and jalapeño (if using). Mix until smooth or to your preference.
Serving
- Once the fries are done, serve them hot alongside the creamy guacamole.
Notes
For the best results, ensure your fries are cut evenly and don’t overcrowd the baking sheet. Soaking the fries in cold water for 30 minutes can enhance crispiness. Store leftover fries in an airtight container in the fridge for up to 3 days, or freeze for longer storage.
