Ingredients
  

For the Filling
  • 2 cups Fresh Strawberries, sliced Use ripe strawberries for the best flavor.
  • 2 tablespoons Sugar Adjust depending on the sweetness of strawberries.
For the Crust
  • 2 cups Rolled Oats Old-fashioned rolled oats are recommended.
  • 1 cup All-Purpose Flour Gluten-free flour blends can be used.
  • 1/2 cup Brown Sugar Coconut sugar can be used as a substitute.
  • 1 teaspoon Baking Powder Essential for a light crumb.
  • 1/4 teaspoon Salt Balances sweetness.
  • 1/2 cup Butter, melted Can be substituted with coconut oil or vegan butter.
  • 1 teaspoon Vanilla Extract Almond extract can be used for variation.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease an 8×8-inch baking dish or line with parchment paper.
  3. In a bowl, mix sliced strawberries with sugar and set aside.
Mixing the Dry Ingredients
  1. In another bowl, whisk together rolled oats, flour, brown sugar, baking powder, and salt.
  2. Melt the butter and pour it into the dry mixture, stirring until crumbly.
Assembling the Bars
  1. Press half of the oat mixture into the prepared baking dish.
  2. Spread the strawberry filling evenly over the crust.
  3. Sprinkle the remaining oat mixture on top.
Baking
  1. Bake for about 25-30 minutes until golden brown and bubbly.
Cooling and Serving
  1. Let the bars cool in the pan for at least 10 minutes before slicing.
  2. Serve warm or at room temperature.

Notes

Chill the bars in the fridge before slicing for cleaner edges. These bars can be served warm with whipped cream or ice cream.
