Strawberry Lasagna

Ingredients
  

Fruits
  • 2 cups Fresh strawberries, sliced Use ripe, juicy strawberries for the best flavor.
Cheese Mixture
  • 8 oz Cream cheese Neufchâtel can be used for a lighter version.
  • 8 oz Mascarpone cheese Ricotta can be used as a substitute.
  • 1 cup Powdered sugar Adjust to taste.
  • 1 tsp Vanilla extract Use pure vanilla for best results.
Whipped Cream
  • 2 cups Whipped cream Store-bought or homemade.
Base Layer
  • 1 pkg Graham crackers Any plain cookie can work.

Method
 

Preparation
  1. Wash, hull, and slice the strawberries. Set aside some for garnishing.
  2. In a bowl, combine cream cheese, mascarpone cheese, and powdered sugar. Beat until smooth and creamy. Stir in vanilla extract.
  3. In another bowl, whip the cream until stiff peaks form. Gently fold the whipped cream into the cheese mixture until just combined.
Assembly
  1. In a 9x13 inch dish, start with a layer of graham crackers, then spread half of the cheese mixture over the crackers. Add a layer of sliced strawberries on top.
  2. Continue layering with more graham crackers, the remaining cheese mixture, and another layer of strawberries. Top with extra whipped cream and reserved strawberry slices.
Chill
  1. Cover and refrigerate for at least 4 hours, or overnight.

Notes

Serve chilled, sliced like a cake. Pairs well with extra whipped cream on the side or vanilla ice cream. Store in the fridge for up to 3 days, or freeze individual pieces tightly wrapped.
