Preparation
- Wash, hull, and slice the strawberries. Set aside some for garnishing.
- In a bowl, combine cream cheese, mascarpone cheese, and powdered sugar. Beat until smooth and creamy. Stir in vanilla extract.
- In another bowl, whip the cream until stiff peaks form. Gently fold the whipped cream into the cheese mixture until just combined.
Assembly
- In a 9x13 inch dish, start with a layer of graham crackers, then spread half of the cheese mixture over the crackers. Add a layer of sliced strawberries on top.
- Continue layering with more graham crackers, the remaining cheese mixture, and another layer of strawberries. Top with extra whipped cream and reserved strawberry slices.
Chill
- Cover and refrigerate for at least 4 hours, or overnight.
Notes
Serve chilled, sliced like a cake. Pairs well with extra whipped cream on the side or vanilla ice cream. Store in the fridge for up to 3 days, or freeze individual pieces tightly wrapped.
