Preparation
  1. Heat olive oil in a skillet over medium heat.
  2. Season chicken breasts with salt and pepper, then sear them in the skillet for 2-3 minutes on each side until golden brown.
  3. Place the seared chicken breasts in the slow cooker.
Cooking
  1. Pour the peach BBQ sauce over the chicken, ensuring it’s well coated.
  2. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through and tender.
Serving
  1. Once done, shred the chicken if desired and serve over cooked rice with a side of fresh veggies.

Notes

For extra flavor, marinate the chicken in the peach BBQ sauce for a few hours before cooking. Consider adding some chopped onions or bell peppers to the slow cooker for added texture and taste. If you prefer thicker sauce, remove the chicken once cooked and simmer the sauce in the skillet for a few minutes until it reduces.
