Savory Herb Crustless Cottage Cheese Quiche

Ingredients
  

For the Quiche Base
  • 16 oz Cottage cheese full-fat or low-fat
  • 4 Large eggs
  • 1/4 cup All-purpose flour or gluten-free flour blend
  • 1/4 cup Milk any kind (dairy or non-dairy)
  • 1/2 tsp Onion powder
  • 1/2 tsp Garlic powder
  • 1/2 tsp Dried Italian herbs or herb de Provence
  • 1/2 tsp Salt or to taste
  • 1/4 tsp Black pepper freshly ground
For the Fillings
  • 1 cup Shredded cheese Cheddar, Monterey Jack, Gruyere, or a blend
  • 1 cup Chopped spinach frozen, thawed and squeezed very dry
  • 1/2 cup Diced bell pepper any color
  • 1/4 cup Chopped green onions or chives
  • Optional 1/2 cup Cooked protein diced ham, cooked bacon bits, or sautéed mushrooms

Method
 

Prepare for Baking
  1. Preheat your oven to 375°F (190°C). Lightly grease a 9-inch pie plate with cooking spray or butter.
Mix the Quiche Base
  1. In a large mixing bowl, whisk together the cottage cheese, eggs, flour, milk, onion powder, garlic powder, Italian herbs, salt, and black pepper until well combined and relatively smooth. A few small lumps of cottage cheese are fine.
Add Fillings
  1. Gently fold in the shredded cheese, thoroughly squeezed dry spinach, diced bell pepper, and chopped green onions. If using, also add any optional cooked protein.
Bake the Quiche
  1. Pour the mixture into the prepared pie plate. Spread evenly.
  2. Bake for 40-45 minutes, or until the quiche is set in the center and the top is lightly golden brown. A knife inserted into the center should come out clean.
Cool and Serve
  1. Remove from the oven and let the quiche rest for 5-10 minutes before slicing and serving. This allows it to set completely and makes for cleaner slices.

Notes

Feel free to customize your quiche with different vegetables (sautéed mushrooms, broccoli florets) or cheeses. For a richer flavor, use full-fat cottage cheese. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days and reheated gently.
