  • 1 pound fresh asparagus Choose firm asparagus with bright green color and tight tips.
  • 1 tablespoon olive oil
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons grated parmesan cheese You can replace with other cheeses like feta or mozzarella.
  • 1 tablespoon lemon juice Juiced from about 1 lemon.
  • Red pepper flakes Optional, for serving.

Method
 

Preparation
  1. Preheat your oven to 425 degrees F and line a baking sheet with parchment paper.
  2. Rinse and dry the asparagus using paper towels. Trim the ends to remove the tough parts of the stems by cutting off about an inch from the bottom.
Seasoning and Roasting
  1. Arrange the asparagus spears in a single layer on the prepared baking sheet. Drizzle with olive oil and sprinkle with kosher salt and ground black pepper. Toss to coat the asparagus evenly. Then, sprinkle the grated parmesan cheese over the asparagus.
  2. Roast the asparagus in the oven for about 10 minutes, or until it’s fork-tender.
Serving
  1. Once the asparagus is cooked, remove it from the oven. Squeeze fresh lemon juice over the top and add a pinch of red pepper flakes if desired. Enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to restore their crispy texture. For extra flavor, consider adding minced garlic or lemon zest before roasting. Avoid overcrowding the baking sheet for even roasting.
