Ingredients
  

For the Salad
  • 2 medium English cucumbers diced into 1/2-inch cubes
  • 2 medium ripe avocados pitted, peeled, and diced into 1/2-inch cubes
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion finely diced
  • 1/4 cup fresh cilantro chopped
For the Zesty Lime Vinaigrette
  • 3 tbsp fresh lime juice from 1-2 limes
  • 2 tbsp extra virgin olive oil
  • 1 tsp honey or maple syrup optional, for a touch of sweetness
  • 1/2 tsp garlic powder or 1 clove minced fresh garlic
  • 1/4 tsp salt or to taste
  • 1/8 tsp black pepper freshly ground, or to taste

Method
 

Prepare the Salad Components
  1. In a large mixing bowl, gently combine the diced cucumbers, diced avocados, halved cherry tomatoes, finely diced red onion, and chopped fresh cilantro.
Make the Zesty Lime Vinaigrette
  1. In a small bowl, whisk together the fresh lime juice, extra virgin olive oil, honey (if using), garlic powder, salt, and black pepper until well combined and emulsified.
Combine and Serve
  1. Pour the vinaigrette over the salad ingredients in the large bowl. Gently toss until all the vegetables are evenly coated. Be careful not to mash the avocado.
  2. Serve immediately for the best texture and flavor. The salad is best enjoyed fresh.

Notes

For an extra pop of flavor, consider adding a pinch of red pepper flakes to the dressing. If preparing ahead, keep the dressing separate and toss just before serving to prevent the avocado from browning. A squeeze of lime juice directly on the avocado can also help prevent browning if you must combine ahead of time.
