Prepare the Salad Components
- In a large mixing bowl, gently combine the diced cucumbers, diced avocados, halved cherry tomatoes, finely diced red onion, and chopped fresh cilantro.
Make the Zesty Lime Vinaigrette
- In a small bowl, whisk together the fresh lime juice, extra virgin olive oil, honey (if using), garlic powder, salt, and black pepper until well combined and emulsified.
Combine and Serve
- Pour the vinaigrette over the salad ingredients in the large bowl. Gently toss until all the vegetables are evenly coated. Be careful not to mash the avocado.
- Serve immediately for the best texture and flavor. The salad is best enjoyed fresh.
Notes
For an extra pop of flavor, consider adding a pinch of red pepper flakes to the dressing. If preparing ahead, keep the dressing separate and toss just before serving to prevent the avocado from browning. A squeeze of lime juice directly on the avocado can also help prevent browning if you must combine ahead of time.
