These vibrant ice cubes are simple to make and add a festive touch to any drink, perfect for summer gatherings or year-round enjoyment.

Ingredients
  

Red Layer
  • 1 cup Fresh strawberries, hulled and chopped Look for ripe and juicy strawberries for the best flavor.
White Layer
  • 1 cup Coconut water or lemonade Coconut water can be swapped for regular water.
Blue Layer
  • 1 cup Blueberries Can be substituted with blackberries for a slight change in flavor.
Optional Ingredient
  • 1 sprig Fresh mint Optional for a refreshing twist.

Method
 

Preparation
  1. Rinse your strawberries and blueberries. Hull the strawberries and chop them into smaller pieces for easy freezing.
Layering
  1. Fill your ice cube tray with the strawberry pieces until it’s about one-third full. Top with coconut water until they're covered.
  2. Freeze for about 2-3 hours until solid.
  3. Once the strawberry layer is frozen, carefully pour in your coconut water until it fills the tray about two-thirds full.
  4. Return the tray to the freezer for another 2-3 hours, or until fully frozen.
  5. Fill the remainder with blueberries and top off with more coconut water.
  6. Freeze for an additional 2-3 hours until completely solid.
Serving
  1. Run warm water over the bottom of the tray and gently pop out your beautiful, layered ice cubes.

Notes

These ice cubes can be stored in the freezer for up to 2 months, but store in a zip-top bag to avoid freezer odors. No reheating is necessary—just pop them into your drink.
