Ingredients
  

Fruit mixture
  • 1 cup raspberries (fresh or frozen) Use ripe and juicy raspberries for best flavor.
  • 1/2 cup granulated sugar Adjust sweetness according to taste.
  • 1 tablespoon lemon juice
Crust and topping
  • 1 cup all-purpose flour Can be substituted with gluten-free flour if needed.
  • 1 cup rolled oats Can be substituted with gluten-free oats.
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine raspberries, sugar, and lemon juice.
  3. In another bowl, mix flour, oats, brown sugar, baking powder, and salt.
  4. Stir in melted butter until the mixture is crumbly.
  5. Press half of the crumb mixture into the bottom of a greased baking pan.
  6. Spread the raspberry mixture over the crust.
  7. Sprinkle the remaining crumb mixture on top.
Baking
  1. Bake for 25-30 minutes or until golden brown.
  2. Allow to cool before cutting into squares.

Notes

Serve warm or at room temperature. Add a scoop of vanilla ice cream or whipped cream for extra sweetness. Store in an airtight container for up to 3 days at room temperature or 1 week in the refrigerator; can freeze for up to 3 months.
