Preparation
- Preheat the oven to 350°F (175°C).
- In a bowl, combine raspberries, sugar, and lemon juice.
- In another bowl, mix flour, oats, brown sugar, baking powder, and salt.
- Stir in melted butter until the mixture is crumbly.
- Press half of the crumb mixture into the bottom of a greased baking pan.
- Spread the raspberry mixture over the crust.
- Sprinkle the remaining crumb mixture on top.
Baking
- Bake for 25-30 minutes or until golden brown.
- Allow to cool before cutting into squares.
Notes
Serve warm or at room temperature. Add a scoop of vanilla ice cream or whipped cream for extra sweetness. Store in an airtight container for up to 3 days at room temperature or 1 week in the refrigerator; can freeze for up to 3 months.
