  • 4 pieces eggs
  • 4 pieces corn tortillas Fresh tortillas for maximum crispiness.
  • 1 cup zesty tomato sauce You can swap with green salsa for different flavor.
  • 1/2 cup black beans Optional, can be omitted.
  • 1/2 pieces avocado, sliced Optional, for garnish.
  • 1/4 cup chopped cilantro Adds freshness to the dish.
  • to taste Salt and pepper
  • Oil for frying

Method
 

Preparation
  1. Heat oil in a skillet over medium heat.
  2. Fry the tortillas until crispy, then remove and set aside.
Cooking
  1. In the same skillet, crack the eggs and cook them to your preference (sunny side up or over easy).
  2. Once the eggs are cooked, place a tortilla on each plate.
  3. Top each tortilla with black beans (if using), then the egg, and smother with zesty tomato sauce.
  4. Garnish with avocado slices and chopped cilantro.
  5. Serve immediately and enjoy!

Notes

For storage, keep leftovers in an airtight container in the refrigerator. Be aware that tortillas may lose their crispiness. Reheat in a skillet for best results. You can also add cheese on top of the eggs for a creamy touch or try different toppings like jalapeƱos or your favorite salsa.
