Preparation
- Heat oil in a skillet over medium heat.
- Fry the tortillas until crispy, then remove and set aside.
Cooking
- In the same skillet, crack the eggs and cook them to your preference (sunny side up or over easy).
- Once the eggs are cooked, place a tortilla on each plate.
- Top each tortilla with black beans (if using), then the egg, and smother with zesty tomato sauce.
- Garnish with avocado slices and chopped cilantro.
- Serve immediately and enjoy!
Notes
For storage, keep leftovers in an airtight container in the refrigerator. Be aware that tortillas may lose their crispiness. Reheat in a skillet for best results. You can also add cheese on top of the eggs for a creamy touch or try different toppings like jalapeƱos or your favorite salsa.
