Prepare the Batter
- In a microwave-safe mug (12-16 oz recommended), combine the protein powder, all-purpose flour, baking powder, and granulated sweetener. Whisk thoroughly with a small fork or mini whisk until all dry ingredients are well combined and no clumps remain.
- Add the milk, unsweetened applesauce (or oil), and vanilla extract to the dry mixture. Mix well, scraping down the sides of the mug, until a smooth, uniform batter forms. Ensure there are no pockets of dry ingredients.
- If desired, gently fold in any optional mix-ins like chocolate chips.
Cook the Mug Cake
- Microwave the mug on high for 60-90 seconds. Cooking time can vary significantly based on your microwave's wattage. Start with 60 seconds, then check. If the cake still looks very wet, microwave in additional 15-second increments until the cake is set and firm to the touch but still slightly moist.
- Be careful not to overcook, as this can lead to a dry, rubbery texture. It's better to slightly undercook it than overcook.
Serve
- Carefully remove the hot mug from the microwave. Let the mug cake cool for 1-2 minutes before eating directly from the mug, or gently invert it onto a plate if you prefer. Top with extra chocolate chips, a dollop of Greek yogurt, or fresh berries, if desired.
- Serve immediately and enjoy!
Notes
Different protein powders (especially plant-based vs. whey) can absorb liquids differently. You might need to adjust the amount of milk by 1-2 teaspoons to achieve the right batter consistency. For a richer flavor, consider adding a pinch of cinnamon or a tiny amount of cocoa powder with the dry ingredients.
