Preparation
- Spread pesto on one side of each slice of bread.
- Place a slice of cheese on the non-pesto side of one bread slice.
- Top with the other slice of bread, pesto side down.
Cooking
- Heat a skillet over medium heat and add butter.
- Once melted, place the sandwich in the skillet.
- Cook until golden brown on one side, then flip and cook until the cheese is melted and the other side is also golden.
- Remove from skillet, slice, and serve warm.
Notes
You can serve with soup, salad, or fresh veggies. For extra flavor, add more pesto or sprinkle some cheese on top. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat using a skillet or toaster oven until warm and crispy again. For a vegan version, use plant-based cheese and vegan butter. Add jalapeƱos for a spicy kick.
