Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the old-fashioned oats, flour, baking soda, and a pinch of salt. Set this aside.
  3. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until it’s fluffy and light.
  4. Beat in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually mix in the dry ingredients until just combined. Be careful not to overmix!
  6. Gently fold in the chocolate chips and M&Ms until they’re evenly distributed in the dough.
  7. Using a cookie scoop or tablespoon, drop rounded balls of dough onto your prepared baking sheet, spacing them evenly.
  8. Bake in the preheated oven for about 10–12 minutes or until the edges are golden brown. The centers might look slightly underbaked—that's okay!
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Chill the dough for 30 minutes before baking to help the cookies keep their shape better. Consider adding a pinch of cinnamon or a few chopped nuts for extra flavor.
