  • 2 cups fresh tomatoes, diced Use ripe, in-season tomatoes for the best flavor.
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 8 oz mozzarella cheese, diced
  • Salt and pepper to taste

Method
 

Cooking
  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a bowl, combine the diced tomatoes, chopped basil, minced garlic, and olive oil. Season with salt and pepper.
  3. Toss the warm pasta with the tomato mixture to combine.
  4. Gently fold in the diced mozzarella cheese.
  5. Serve immediately and enjoy!

Notes

Pasta alla Checca is best served right away while it is warm. You can add some extra fresh basil on top for a nice touch. This dish pairs well with a simple green salad and a glass of your favorite white wine. If you have leftovers, store them in an airtight container in the fridge for up to three days.
