  • 1 bunch Asparagus Choose fresh, firm asparagus for the best flavor.
  • 1/2 cup Parmesan cheese, shaved Adjust based on preference.
  • 1 cup Tomatoes, chopped
  • 3 cloves Garlic, minced Adjust the amount based on your preference.
  • 2 tablespoons Olive oil For drizzling.
  • 1 tablespoon Balsamic glaze For drizzling before serving.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Trim the ends of the asparagus and place them on a baking sheet.
  3. Drizzle with olive oil, and season with salt and pepper.
  4. Add minced garlic, chopped tomatoes, and shaved parmesan on top of the asparagus.
Cooking
  1. Roast in the oven for about 15-20 minutes, or until the asparagus is tender.
  2. Drizzle with balsamic glaze before serving.

Notes

Serve hot as a tasty side dish, pairs well with grilled meats or pasta. For extra zest, add a squeeze of lemon juice before serving. If using frozen asparagus, thaw and drain excess moisture before roasting.
