  • 1 tsp vanilla extract

  • 1/4 tsp salt
  • 1/2 cup mini chocolate chips or chopped dark chocolate

Method
 

  1. Add the cottage cheese to a food processor or high-speed blender. Process until completely smooth and creamy, scraping down the sides as needed. There should be no lumps remaining. This usually takes 1-2 minutes.
  2. Transfer the smooth cottage cheese to a medium mixing bowl. Stir in the maple syrup and vanilla extract until well combined.
  3. Add the oat flour, protein powder (if using), and salt to the wet mixture. Stir with a rubber spatula until a thick dough forms. If the dough seems too sticky, add 1-2 additional tablespoons of oat flour.
  4. Fold in the mini chocolate chips until evenly distributed throughout the dough.
  5. Line a baking sheet with parchment paper. Using a small cookie scoop or your hands, roll the dough into 12-16 bite-sized balls (about 1 tablespoon each). Place them on the prepared baking sheet.
  6. Place the baking sheet with the cookie dough bites in the refrigerator for at least 30 minutes to firm up. This helps them hold their shape and improves the texture.
