Preparation
- Cut the mozzarella into small cubes, slightly larger than a marble. Set aside.
- In a large bowl, combine ground beef, breadcrumbs, egg, minced garlic, chopped parsley, grated Parmesan, salt, and pepper. Mix until just combined.
Stuffing and Shaping
- Take a small portion of the mixture, flatten it in your hand, place a cube of mozzarella in the center, wrap the meat around the cheese, and roll into a ball. Set aside and repeat with remaining mixture.
Cooking
- In a large skillet over medium heat, add a splash of oil and carefully place the meatballs in the skillet. Cook until browned on all sides, about 5-7 minutes.
- Pour marinara sauce over the browned meatballs, cover, and let simmer for about 10-15 minutes, allowing flavors to meld and cheese to melt.
Serving
- Serve your gooey, cheesy meatballs with your favorite sides.
Notes
Keep mixture cool if sticky. Don't overcrowd the pan while browning and taste a small meatball for seasoning before cooking all. You can experiment with different herbs or sauces.
