Ingredients
  

Meatball Base

  • 1 cup Breadcrumbs Use panko for extra crunch or gluten-free breadcrumbs if needed.
  • 1 Egg Acts as a binder; can use a flax egg for vegan option.
  • 3 cloves Garlic, minced Adds depth of flavor.
  • 1/4 cup Fresh parsley, chopped Can swap with basil or oregano.
  • 1/4 cup Parmesan cheese, grated Use nutritional yeast for a vegan option.
  • to taste Salt and pepper Essential for enhancing flavors.
Cheese Filling
  • 8 oz Mozzarella cheese Fresh mozzarella for gooey center or shredded works too.
Sauce
  • 2 cups Marinara sauce Store-bought or homemade.

Method
 

Preparation
  1. Cut the mozzarella into small cubes, slightly larger than a marble. Set aside.
  2. In a large bowl, combine ground beef, breadcrumbs, egg, minced garlic, chopped parsley, grated Parmesan, salt, and pepper. Mix until just combined.
Stuffing and Shaping
  1. Take a small portion of the mixture, flatten it in your hand, place a cube of mozzarella in the center, wrap the meat around the cheese, and roll into a ball. Set aside and repeat with remaining mixture.
Cooking
  1. In a large skillet over medium heat, add a splash of oil and carefully place the meatballs in the skillet. Cook until browned on all sides, about 5-7 minutes.
  2. Pour marinara sauce over the browned meatballs, cover, and let simmer for about 10-15 minutes, allowing flavors to meld and cheese to melt.
Serving
  1. Serve your gooey, cheesy meatballs with your favorite sides.

Notes

Keep mixture cool if sticky. Don't overcrowd the pan while browning and taste a small meatball for seasoning before cooking all. You can experiment with different herbs or sauces.
