Ingredients
  

Crust
  • 1 cup crushed graham crackers
  • 1/2 cup butter, melted
Cheesecake Filling
  • 8 ounces cream cheese, softened Make sure to soften to room temperature for easy mixing.
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 pieces eggs
  • 1 cup mini Rolos, chopped Adjust based on preference for sweetness.
Toppings
  • 1/4 cup chocolate chips For topping.
  • caramel sauce For drizzling.

Method
 

Preparation
  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix the crushed graham crackers with melted butter and press into the bottom of mini cupcake liners.
Cheesecake Filling
  1. In another bowl, beat the cream cheese, sugar, and vanilla until smooth.
  2. Add the eggs one at a time, mixing after each addition.
  3. Stir in the chopped Rolos.
  4. Pour the cream cheese mixture over the crust in each liner.
Baking and Serving
  1. Bake for 20-25 minutes until set.
  2. Allow to cool, then drizzle with caramel sauce and top with chocolate chips.
  3. Refrigerate before serving.

Notes

Store in an airtight container in the refrigerator for 4 to 5 days. Can freeze for longer storage.
