Preparation
- Preheat the oven to 325°F (163°C).
- In a bowl, mix the crushed graham crackers with melted butter and press into the bottom of mini cupcake liners.
Cheesecake Filling
- In another bowl, beat the cream cheese, sugar, and vanilla until smooth.
- Add the eggs one at a time, mixing after each addition.
- Stir in the chopped Rolos.
- Pour the cream cheese mixture over the crust in each liner.
Baking and Serving
- Bake for 20-25 minutes until set.
- Allow to cool, then drizzle with caramel sauce and top with chocolate chips.
- Refrigerate before serving.
Notes
Store in an airtight container in the refrigerator for 4 to 5 days. Can freeze for longer storage.
