Ingredients
  

Shrimp Marinade
  • 1 pound shrimp, peeled and deveined Fresh shrimp recommended for best flavor and texture.
  • 1 lime lime, juiced
  • 1 tablespoon olive oil
  • 1 teaspoon taco seasoning Adjust to taste.
  • to taste Salt and pepper
Salad Ingredients
  • 2 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 each avocado, diced
  • 1/2 cup red onion, chopped
  • 1/2 cup corn kernels
  • 1/2 cup black beans, rinsed and drained
  • 1/4 cup cilantro, chopped

Method
 

Preparation
  1. In a bowl, combine shrimp, lime juice, olive oil, taco seasoning, salt, and pepper. Marinate for 10 minutes.
Cooking
  1. Heat a skillet over medium-high heat and cook the shrimp for 2-3 minutes on each side until pink and cooked through.
Assembly
  1. In a large salad bowl, combine mixed greens, cherry tomatoes, avocado, red onion, corn, black beans, and cilantro.
  2. Add cooked shrimp on top of the salad.
  3. Toss gently and serve immediately.

Notes

For a spicy kick, consider adding sliced jalapeƱos or a dash of hot sauce. Store leftovers in an airtight container in the refrigerator for up to one day.
