  • 3 cloves garlic, minced
  • 1 cup heavy cream Substitutes like half-and-half can be used for a lighter dish.
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1 cup sun-dried tomatoes, chopped Drain and chop if using jarred tomatoes.
  • 1 cup spinach, chopped
  • ½ cup grated Parmesan cheese
  • for garnish Fresh basil Use whole leaves for garnish.

Cooking
  1. Season the chicken breasts with salt and pepper.
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Add the chicken breasts and cook until golden brown, about 6-7 minutes per side.
  4. Remove the chicken and set aside.
  5. In the same skillet, add garlic and sauté until fragrant.
  6. Pour in the heavy cream and chicken broth, stirring to combine.
  7. Add Italian seasoning, sun-dried tomatoes, and spinach.
  8. Return the chicken to the skillet and simmer until cooked through, about 5-10 minutes.
  9. Stir in the Parmesan cheese until melted.
  10. Serve warm, garnished with fresh basil.

Notes

Avoid overcrowding the skillet while cooking the chicken for a better golden finish. Consider adding red pepper flakes for heat and substitute with lighter cream options if desired. Other vegetables like bell peppers or mushrooms can enhance flavor and nutrition.
