Preparation
- In a bowl, combine chia seeds and coconut milk. Stir well and let sit for about 10-15 minutes until it thickens.
- Add honey or maple syrup and vanilla extract if desired.
- Layer in a serving glass: start with chia pudding, then add kiwi and raspberries.
- Repeat layers until all ingredients are used.
- Refrigerate for at least 2 hours or overnight. Serve chilled.
Notes
Store leftovers in the refrigerator, covered, for up to 3 days. Stir before serving again, as chia seeds might settle.
