  • 2 tablespoons chia seeds Ensure they are well combined with coconut milk.
  • 1 cup coconut milk For creamier texture, use full-fat coconut milk.
  • 1 kiwi, peeled and diced Fresh and ripe for best flavor.
  • 1/2 cup raspberries Fresh or frozen can be used.
  • 1 tablespoon honey or maple syrup (optional) Adjust to your taste for sweetness.
  • 1/2 teaspoon vanilla extract (optional) Adds flavor but can be omitted.

Method
 

Preparation
  1. In a bowl, combine chia seeds and coconut milk. Stir well and let sit for about 10-15 minutes until it thickens.
  2. Add honey or maple syrup and vanilla extract if desired.
  3. Layer in a serving glass: start with chia pudding, then add kiwi and raspberries.
  4. Repeat layers until all ingredients are used.
  5. Refrigerate for at least 2 hours or overnight. Serve chilled.

Notes

Store leftovers in the refrigerator, covered, for up to 3 days. Stir before serving again, as chia seeds might settle.
