Ingredients

For the Dipping Oil
  • 1/2 cup extra virgin olive oil high quality recommended
  • 2 cloves garlic minced very fine or grated
  • 1 tbsp fresh rosemary finely chopped
  • 1 tbsp fresh oregano finely chopped
  • 1 tbsp fresh parsley finely chopped
  • 1/2 tsp red pepper flakes adjust to taste
  • 1/4 tsp sea salt or to taste
  • 1/8 tsp black pepper freshly ground, or to taste
  • 1 tsp balsamic vinegar (optional, for a touch of tang)
  • 2 tbsp freshly grated Parmesan cheese (optional, for serving)
  • 1 loaf crusty Italian bread sliced or torn

Equipment

  • Small mixing bowl
  • Whisk
  • Shallow serving dish

Method

Combine Ingredients
  1. In a small mixing bowl, combine the extra virgin olive oil, minced garlic, finely chopped fresh rosemary, oregano, and parsley. Add the red pepper flakes, sea salt, and freshly ground black pepper.
  2. If using, add the optional balsamic vinegar for an extra layer of flavor and acidity. Whisk all ingredients together thoroughly to ensure they are well combined.
Infuse & Serve
  1. Pour the dipping oil into a shallow serving dish or plate. For best flavor, allow the oil to sit for at least 5-10 minutes to allow the flavors to meld and the garlic to slightly infuse the oil.
  2. Just before serving, you may sprinkle with the optional freshly grated Parmesan cheese if desired.
  3. Serve immediately with fresh, crusty Italian bread for dipping. Enjoy!

Notes

For an even deeper flavor, let the oil sit at room temperature for 30 minutes to an hour before serving. You can also lightly warm the olive oil gently on the stove (do not simmer or fry) before adding the other ingredients to help infuse the flavors more quickly. This dipping oil is best made fresh but can be stored in an airtight container at room temperature for up to 2-3 days. For variety, consider adding a squeeze of fresh lemon juice or a pinch of dried basil.
