Irresistible Garlic Parmesan Cheeseburger Bombs for Game Day

These savory cheeseburger bombs are packed with seasoned ground beef and gooey cheese, all wrapped in flaky biscuit dough and coated in an addictive garlic parmesan butter, perfect for game day snacking!

Ingredients
  

For the Beef Filling
  • 1 lbs ground beef 80/20 lean
  • 1/2 cup yellow onion finely diced
  • 2 cloves garlic minced
  • 1 tsp Worcestershire sauce
  • 1/2 tsp salt
  • 1/4 tsp black pepper freshly ground
  • 1/4 cup ketchup
  • 6 slices American cheese or your favorite meltable cheese, quartered (2 quarters per bomb)
For the Bomb Dough
  • 1 can refrigerated biscuit dough 10.2 oz, 12 count standard size biscuits
For the Garlic Parmesan Coating
  • 1/2 cup unsalted butter melted
  • 3 cloves garlic minced
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp fresh parsley chopped, for garnish (optional)

Method
 

Prepare the Beef Filling
  1. In a large skillet, brown the ground beef over medium-high heat, breaking it up with a spoon. Drain off any excess grease.
  2. Add the diced yellow onion and cook until softened, about 3-5 minutes.
  3. Stir in the minced garlic, Worcestershire sauce, salt, and black pepper. Cook for another minute until fragrant.
  4. Remove from heat and stir in the ketchup. Set aside to cool slightly.
Assemble the Bombs
  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Separate the biscuit dough into 12 individual biscuits. Flatten each biscuit into a 3-4 inch circle on a lightly floured surface or directly on the baking sheet.
  3. Place a tablespoon of the beef mixture in the center of each flattened biscuit.
  4. Top the beef mixture with two quartered slices of American cheese (or one full slice, torn).
  5. Carefully gather the edges of the biscuit dough up and over the filling, pinching tightly to seal the seam completely. Roll gently between your palms to form a smooth ball.
  6. Place the sealed cheeseburger bombs seam-side down on the prepared baking sheet, ensuring they are not touching.
Bake the Bombs
  1. Bake for 12-15 minutes, or until the biscuit dough is golden brown and cooked through.
  2. While the bombs are baking, prepare the garlic parmesan coating.
Prepare Garlic Parmesan Coating & Finish
  1. In a small microwave-safe bowl, melt the unsalted butter.
  2. Stir in the minced garlic and grated Parmesan cheese.
  3. Once the bombs are out of the oven, immediately brush them generously with the garlic parmesan butter mixture.
  4. Sprinkle with fresh chopped parsley, if desired, for an extra burst of flavor and color.
  5. Serve warm with your favorite dipping sauces like ketchup, mustard, or a special burger sauce.

Notes

For an extra kick, add a pinch of red pepper flakes to the beef mixture. These bombs can also be cooked in an air fryer at 350°F (175°C) for 8-10 minutes, flipping halfway through, until golden brown. Leftovers can be stored in an airtight container in the refrigerator for up to 2-3 days. Reheat gently in the oven or air fryer.
