  • 1 pound chicken, cut into pieces
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon chili powder
  • 1 can coconut milk (15 oz)

Method
 

Cooking
  1. Heat oil in a large pot over medium heat. Add chopped onions and sauté until translucent.
  2. Stir in garlic and ginger; cook for another minute.
  3. Add turmeric, cumin seeds, coriander, and chili powder. Mix well and cook for a minute until fragrant.
  4. Add chicken pieces and cook until browned on all sides.
  5. Pour in the coconut milk, add salt, and bring to a simmer.
  6. Cover and cook for about 20-25 minutes until chicken is cooked through.
  7. Garnish with fresh cilantro and serve hot.

Notes

For more heat, add extra chili powder or fresh chilies. If you prefer a thicker sauce, let the curry simmer uncovered for a few minutes before serving. Adding vegetables like bell peppers or spinach can make this dish healthier and more colorful.
