Marinate the Chicken
- In a large mixing bowl, combine the cut chicken pieces with olive oil, fresh lemon juice, lemon pepper seasoning, garlic powder, onion powder, salt, and black pepper. Toss well to ensure all chicken is evenly coated.
- Cover the bowl and refrigerate to marinate for at least 30 minutes, or up to 2 hours for best flavor. If using wooden skewers, remember to soak them in water during this time.
Prepare Skewers & Cook
- Thread the marinated chicken pieces onto the pre-soaked skewers. Don't pack them too tightly, leaving a small space between pieces for even cooking.
- To Grill: Preheat your grill to medium-high heat (about 400°F / 200°C). Lightly oil the grill grates. Place the skewers on the grill and cook for 3-4 minutes per side, turning frequently, until the internal temperature of the chicken reaches 165°F (74°C).
- To Air Fry: Preheat your air fryer to 375°F (190°C). Arrange the skewers in a single layer in the air fryer basket (cook in batches if necessary). Air fry for 12-15 minutes, flipping halfway through, until the chicken is cooked through and lightly browned.
Make the Hot Honey Glaze
- While the chicken cooks, prepare the hot honey glaze. In a small saucepan over medium-low heat, combine the honey, hot sauce, butter, and apple cider vinegar. Whisk constantly until the butter is melted and the mixture is smooth and slightly bubbling. Remove from heat.
Glaze & Serve
- Once the chicken skewers are cooked, brush generously with the hot honey glaze on all sides. You can also toss them directly in the glaze in a bowl for full coverage.
- Garnish with fresh chopped parsley and serve immediately with lemon wedges on the side. Enjoy!
Notes
For best results, marinate the chicken for at least an hour. If you don't have a grill or air fryer, you can bake the skewers in a preheated oven at 400°F (200°C) for 20-25 minutes, flipping halfway, until cooked through. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
