Ingredients
  

For the High Protein Chicken
  • 1.5 lbs chicken breast boneless, skinless, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
For the High Protein Buffalo Dip Base
  • 8 oz cream cheese reduced-fat, softened
  • 1 cup Greek yogurt plain, non-fat
  • 1/2 cup buffalo sauce e.g., Frank's RedHot
  • 1/4 cup chicken broth low-sodium
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 2 cups cheddar cheese shredded, reduced-fat, divided
  • 1/4 cup blue cheese crumbles optional, for topping
  • 2 tbsp fresh chives chopped, for garnish

Method
 

Prepare the High Protein Chicken
  1. Pat chicken pieces dry with paper towels. In a large bowl, toss chicken with olive oil, garlic powder, onion powder, salt, and pepper until evenly coated.
  2. Air Fryer Method: Preheat air fryer to 375°F (190°C). Cook chicken in a single layer for 12-15 minutes, flipping halfway, until cooked through and lightly browned. Internal temperature should reach 165°F (74°C).
  3. Stovetop Method: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add chicken and cook for 8-10 minutes, stirring occasionally, until cooked through.
  4. Once cooked, remove chicken and shred using two forks or an electric mixer (for faster shredding). Set aside.
Prepare the High Protein Dip Base
  1. Preheat oven to 375°F (190°C). Lightly grease an 8x8 inch baking dish.
  2. In a large mixing bowl, combine softened reduced-fat cream cheese, Greek yogurt, buffalo sauce, chicken broth, garlic powder, and onion powder. Mix until smooth and well combined.
Assemble the High Protein Buffalo Chicken Dip
  1. Stir in the shredded cooked chicken and 1.5 cups of the shredded reduced-fat cheddar cheese into the dip mixture. Mix until everything is evenly distributed.
  2. Transfer the mixture into the prepared baking dish, spreading it evenly.
  3. Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top.
Bake the High Protein Buffalo Chicken Dip
  1. Bake for 20-25 minutes, or until the dip is hot, bubbly, and the cheese on top is melted and lightly golden.
  2. If desired, broil for the last 1-2 minutes for extra browning, watching carefully to prevent burning.
Garnish and Serve
  1. Remove from oven. If using, sprinkle with blue cheese crumbles and fresh chopped chives.
  2. Serve hot with celery sticks, bell pepper strips, whole-wheat crackers, or your favorite low-carb dippers.

Notes

For an even creamier dip, ensure your cream cheese is very soft before mixing. You can also make this dip ahead of time and refrigerate it before baking; just add an extra 5-10 minutes to the baking time. Store leftovers in an airtight container in the refrigerator for up to 3 days.
