  • 1 head cabbage, chopped
  • 2 medium carrots, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 stalks celery, diced
  • 4 cups vegetable broth Can substitute with chicken broth or water.
  • 1 can diced tomatoes
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • tablespoon Olive oil for sautéing

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add onions, garlic, carrots, and celery, and sauté until softened.
  3. Stir in chopped cabbage, diced tomatoes, and vegetable broth.
  4. Add dried thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and let simmer for about 20 minutes, or until vegetables are tender.
  6. Serve hot and enjoy!
