Hearty Cheesy Biscuits and Gravy Casserole

Ingredients
  

For the Casserole Base
  • 2 cans Refrigerated biscuits 8-count each, large flaky or homestyle
  • 1 lb Ground breakfast sausage mild or spicy
  • 2 cups Shredded sharp cheddar cheese divided
For the Gravy
  • 1/4 cup Unsalted butter melted
  • 1/4 cup All-purpose flour
  • 3 cups Whole milk or 2% milk
  • 1 tsp Salt or to taste
  • 1/2 tsp Black pepper freshly ground, or to taste
  • Pinch Cayenne pepper optional, for a little kick

Method
 

Prepare Ingredients
  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
  2. Open the cans of biscuits and, on a cutting board, cut each biscuit into quarters. Set aside.
Cook Sausage and Make Gravy
  1. In a large skillet over medium-high heat, brown the ground breakfast sausage, breaking it up with a spoon as it cooks. Once fully cooked, drain any excess grease and remove the sausage from the skillet, leaving about 1 tablespoon of rendered fat in the pan. Set the cooked sausage aside.
  2. Reduce heat to medium. Add the butter to the skillet (if you didn't leave enough sausage fat, add additional butter to make 1 tablespoon). Once melted, sprinkle in the flour. Whisk continuously for 1-2 minutes to create a roux, cooking out the raw flour taste.
  3. Gradually whisk in the milk, a little at a time, ensuring there are no lumps. Continue to whisk as the gravy comes to a gentle simmer and thickens, about 5-7 minutes. Season the gravy with salt, black pepper, and the optional pinch of cayenne pepper. Taste and adjust seasonings as needed.
  4. Stir the cooked sausage back into the gravy until well combined.
Assemble and Bake Casserole
  1. Spread half of the quartered biscuits evenly across the bottom of the prepared baking dish.
  2. Pour half of the sausage gravy mixture over the biscuits, spreading it to cover. Sprinkle with 1 cup of the shredded cheddar cheese.
  3. Repeat the layers: place the remaining biscuit pieces over the cheese, then top with the rest of the sausage gravy mixture. Finish with the remaining 1 cup of shredded cheddar cheese.
  4. Bake for 30-35 minutes, or until the casserole is bubbly around the edges, the biscuits are cooked through and golden brown, and the cheese is melted and lightly browned.
  5. Remove from oven and let the casserole rest for 5-10 minutes before serving. This allows the gravy to set slightly and makes for easier serving.

Notes

For make-ahead convenience, you can assemble the casserole the night before, cover it tightly with plastic wrap, and refrigerate.
