Ingredients
  

Main ingredients
  • 1 pound chicken breast, cut into bite-sized pieces Approximately 450g
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 whole lemon, zested and juiced
  • 1 pound asparagus, trimmed Approximately 450g
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Method
 

Preparation
  1. In a large skillet, melt the butter over medium heat.
  2. Add the minced garlic and sauté for about 1 minute until fragrant.
Cooking Chicken
  1. Add the chicken bites to the skillet, season with salt and pepper, and cook until browned and cooked through, approximately 5-7 minutes. Remove the chicken from the skillet and set aside.
Cooking Asparagus
  1. In the same skillet, add the asparagus, season with salt and pepper, and sauté for about 3-4 minutes.
Combining Ingredients
  1. Return the chicken to the skillet with the asparagus. Add the lemon zest and lemon juice, and toss everything together.
  2. Cook for another 2-3 minutes, allowing the flavors to meld.
  3. Serve the dish warm, garnished with fresh parsley if desired.

Notes

To store leftovers, place them in an airtight container and refrigerate for up to 3 days. Reheat in a skillet over medium heat until warmed through. Make sure not to overcrowd the skillet when cooking the chicken. You can add other vegetables like bell peppers or zucchini for a colorful twist.
