Preparation
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the rainbow sprinkles.
- Drop tablespoons of dough onto a baking sheet lined with parchment paper.
Baking
- Bake for 10-12 minutes or until the edges are lightly golden.
- Let cool and enjoy!
Notes
Cookies are best enjoyed fresh from the oven but can also be served at room temperature. For extra fun, add a scoop of ice cream on top for an indulgent dessert. Store cookies in an airtight container for up to a week, or freeze for longer storage.
