Ingredients
  

For the Salsa
  • 2 lbs fresh strawberries hulled and finely diced
  • 1/4 cup red onion finely minced
  • 1 medium jalapeño seeded and finely minced (adjust to taste)
  • 1/4 cup fresh cilantro chopped
  • 2 tbsp fresh lime juice (from about 1 large lime)
  • 1 tbsp honey or agave nectar (optional, for sweetness balance)
  • 1/4 tsp sea salt or to taste

Method
 

Prepare Ingredients
  1. Thoroughly wash and hull the strawberries. Finely dice them into small, uniform pieces. Finely mince the red onion and jalapeño (remember to remove seeds and ribs for less heat, or leave some for more spice). Chop the fresh cilantro.
Combine Salsa Components
  1. In a large mixing bowl, combine the diced strawberries, minced red onion, minced jalapeño, and chopped cilantro.
Season and Dress
  1. Add the fresh lime juice, honey or agave nectar (if using), and sea salt to the bowl.
Final Mix and Chill
  1. Gently toss all ingredients together until well combined. Taste and adjust seasoning as needed, adding more salt, lime juice, or honey if desired.
  2. For best flavor, cover the bowl and refrigerate the strawberry salsa for at least 15-30 minutes before serving to allow the flavors to meld. Serve chilled with cinnamon pita chips, tortilla chips, or as a topping for grilled meats and seafood.

Notes

This salsa is best enjoyed fresh within 1-2 days. The strawberries will release more juice over time. For an extra pop of flavor, a tiny pinch of chili powder or a few dashes of hot sauce can be added. If you prefer a less sweet salsa, omit the honey/agave.
