Ingredients

Wet Ingredients
  • 1 sourdough starter The base of this recipe, providing flavor and lift.
  • 1 cup milk Any milk or milk alternative works.
  • 1/4 cup butter, melted You can substitute with coconut oil for a dairy-free option.
  • 2 eggs Feel free to use flax eggs for a vegan version.
  • 1 teaspoon vanilla extract A splash of vanilla enhances flavor.
Dry Ingredients
  • 1 cup all-purpose flour Whole wheat flour can be a nutritious substitute.
  • 1 tablespoon baking powder Ensure it’s fresh for the best rise.
  • 1/2 teaspoon salt A pinch of sea salt is ideal.

Method

Preparation
  1. In a large bowl, combine the sourdough starter, milk, melted butter, eggs, and vanilla. Whisk until well mixed.
  2. In a separate bowl, whisk together the flour, baking powder, and salt.
  3. Slowly add the dry ingredients to the wet mixture, stirring gently until just combined. Avoid over-mixing; it’s okay if it’s a little lumpy!
Cooking
  1. Preheat your waffle iron according to the manufacturer’s instructions.
  2. Once hot, ladle a scoop of batter onto the iron. Close the lid and cook until the waffles are golden brown and crispy, which usually takes about 4-5 minutes.
Serving
  1. Transfer the waffles to a plate and serve immediately with your favorite toppings.

Notes

Resting the batter for 10 minutes can create even fluffier waffles. Use a measuring cup for even portions. Store leftovers in the fridge for up to 3 days or freeze for up to a month.
