  • 4 bell peppers any color, tops cut off and seeds removed
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 cup tomato sauce plus extra for topping
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper
  • 1 cup shredded cheese cheddar or mozzarella

Method
 

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  3. Add onion and garlic; cook until softened, about 3 minutes.
  4. Stir in cooked rice, tomato sauce, salt, and pepper. Mix well and simmer for 2-3 minutes.
  5. Stuff each bell pepper with the beef mixture and place in the baking dish.
  6. Top each pepper with a spoonful of tomato sauce and cover with foil.
  7. Bake for 25 minutes, then remove foil, sprinkle cheese on top, and bake uncovered for an additional 10 minutes until cheese is melted and bubbly.
  8. Serve warm and enjoy!

Notes

You can substitute ground beef with turkey, chicken, or a plant-based alternative. For extra flavor, add a pinch of Italian seasoning or red pepper flakes.
