Ingredients
  

For the Crust
  • 1 sheet Puff pastry from a 14.1-ounce package, thawed according to package directions
  • 1 tsp Olive oil for greasing
For the Filling
  • 4 Large eggs
  • 1 cup Whole milk or half-and-half
  • 1/2 cup Heavy cream
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1/4 tsp Nutmeg ground
  • 1 cup Shredded Gruyère cheese or Swiss cheese
  • 1/2 cup Cooked ham or bacon diced, optional
  • 1/4 cup Spinach chopped, or other vegetables like bell peppers, mushrooms
  • 2 tbsp Fresh chives chopped, for garnish (optional)

Method
 

Prepare the Crust
  1. Preheat your oven to 400°F (200°C). Lightly grease a 9-inch pie dish or tart pan with olive oil.
  2. Carefully unfold the thawed puff pastry sheet. Gently press it into the prepared pie dish, letting any excess hang over the edges. You can trim the edges if desired, or fold them inwards to create a thicker crust edge. Prick the bottom of the pastry several times with a fork.
Make the Filling
  1. In a large mixing bowl, whisk together the eggs, whole milk, heavy cream, salt, black pepper, and ground nutmeg until well combined and slightly frothy.
  2. Stir in the shredded Gruyère cheese, diced ham or bacon (if using), and chopped spinach or other vegetables.
Bake the Quiche
  1. Pour the egg mixture evenly into the puff pastry crust in the pie dish.
  2. Place the pie dish on a baking sheet (to catch any potential spills) and transfer it to the preheated oven.
  3. Bake for 35-40 minutes, or until the puff pastry is golden brown and puffed, and the center of the quiche is set (a knife inserted near the center should come out clean). If the crust browns too quickly, you can lightly tent it with aluminum foil.
  4. Remove the quiche from the oven and let it cool on a wire rack for at least 10-15 minutes before slicing and serving. This allows the filling to fully set.
  5. Garnish with fresh chopped chives, if desired.

Notes

Feel free to get creative with your fillings! Other great additions include caramelized onions, roasted red peppers, sautéed mushrooms, goat cheese, or feta. For a vegetarian option, simply omit the ham/bacon. Leftover quiche can be stored in an airtight container in the refrigerator for up to 3-4 days. Reheat gently in the microwave or oven.
