- Pat the shrimp thoroughly dry with paper towels. Season with salt and pepper.
- In a small bowl, whisk together the honey, soy sauce, rice vinegar, minced garlic, and grated ginger (if using).
- In a separate tiny bowl, combine the cornstarch and cold water to make a slurry. Set aside.
- Heat olive oil in a large skillet over medium-high heat. Once hot, add the seasoned shrimp in a single layer. Cook for 1-2 minutes per side, until pink and just cooked through. Be careful not to overcook. Remove shrimp from the skillet and set aside.
- Reduce heat to medium. Pour the honey garlic sauce mixture into the skillet. Bring to a gentle simmer. Stir in the cornstarch slurry. Cook, stirring constantly, for 1-2 minutes until the sauce thickens and becomes glossy.
- Return the cooked shrimp to the skillet and toss gently to coat evenly with the thickened sauce. Remove from heat immediately. Serve hot, garnished with sliced green onions and sesame seeds if desired.
