  • 1 cup Greens (spinach or arugula) Fresh
  • 1 large Tomato Sliced
  • 1/4 cup Pesto Use high-quality pesto
  • 8 oz Fresh mozzarella Sliced
  • 2 tbsp Balsamic glaze For drizzling
  • 4 slices Bread (ciabatta or choice) Your choice of bread

Method
 

Preparation
  1. Slice the cucumber, tomato, and fresh mozzarella.
  2. Spread pesto on one side of each slice of bread.
  3. Layer the greens, cucumber slices, tomato slices, and mozzarella on one slice of bread.
  4. Drizzle with balsamic glaze.
  5. Top with another slice of bread, cut in half, and serve.
