Preparation
  1. Preheat your oven to 450°F (230°C).
  2. Boil the potatoes in salted water until fork-tender, about 15-20 minutes.
  3. Drain the potatoes and let them cool slightly.
Smashed and Baked
  1. Place the potatoes on a baking sheet lined with parchment paper, and gently smash each potato with the bottom of a glass or a potato masher.
  2. Drizzle with olive oil, and sprinkle with salt and pepper.
  3. Bake in the preheated oven for 20-25 minutes, or until golden and crispy.

Notes

To store leftover crispy smashed potatoes, let them cool completely, then place them in an airtight container. They can be kept in the refrigerator for up to 3 days.
