Prepare the Salad Components
- Wash and core the apples. Slice them thinly or julienne them to create crisp pieces.
- Peel the carrots and either grate them using a box grater or julienne them with a peeler for consistent texture.
- In a large mixing bowl, combine the prepared apples, carrots, dried cranberries, and chopped pecans (if using). If using fresh mint, add it now.
Make the Honey-Lime Dressing
- In a small mixing bowl, combine the fresh lime juice, honey, extra virgin olive oil, Dijon mustard, salt, and black pepper.
- Whisk vigorously until the dressing is well emulsified and smooth. Taste and adjust seasoning if needed (add more honey for sweetness, lime for tang, or salt/pepper to your preference).
Assemble and Serve the Salad
- Pour the honey-lime dressing over the apple, carrot, and cranberry mixture in the large mixing bowl.
- Toss gently but thoroughly until all ingredients are evenly coated with the dressing. Ensure every piece gets some of that delicious, zesty dressing.
- Serve immediately for best crispness and flavor, or chill for 15-20 minutes to allow flavors to meld further. Garnish with a sprig of fresh mint if desired before serving.
Notes
For an extra layer of flavor and crunch, you can lightly toast the pecans in a dry pan over medium heat for 3-5 minutes before adding them to the salad. This salad is best enjoyed fresh to maintain the crisp texture of the apples and carrots. If making ahead, store the dressing and salad components separately and combine just before serving. Feel free to customize by adding other crunchy vegetables like thinly sliced celery or bell peppers, or a sprinkle of poppy seeds.
