  1. Cut the ripe avocados in half, remove the pits, and scoop the green goodness into a mixing bowl. Mash them with a fork or masher until you reach your desired consistency—smooth or chunky.
  2. Squeeze fresh lime juice over the mashed avocados to brighten the flavor and keep your guacamole from turning brown.
  3. Finely chop the red onion, jalapeño, and tomato. Add them to the bowl along with chopped cilantro.
  4. Sprinkle in some salt and mix everything together, tasting as you go to adjust salt and lime juice to your liking.
  5. Taste the guacamole and adjust heat and tanginess by adding more jalapeño or lime juice as necessary.
  6. For immediate serving, transfer to a serving bowl. If making ahead, cover the surface with plastic wrap to minimize browning and refrigerate.

Notes
