Pudding Base
  • 1/2 cup Chia Seeds The main ingredient that gives the pudding its texture.
  • 2 cups Coconut Milk or Almond Milk Use full-fat coconut milk for richness or almond milk for a lighter option.
  • 2 tbsp Sweetener (Maple Syrup, Honey, or Agave) Adjust sweetness to your preference.
  • 1 tsp Vanilla Extract Adds flavor depth.
  • 1 pinch Salt Enhances flavor.

Preparation
  1. In a medium bowl, combine the chia seeds, milk, sweetener, vanilla extract, and salt. Whisk together until well mixed.
  2. Let the mixture sit for about 5 minutes, then whisk again to break up any clumps of chia seeds.
  3. Cover the bowl and place it in the refrigerator for at least 1-2 hours, or overnight if you can plan ahead.
  4. Once set, give the pudding a good stir. It should be thick and creamy!
  5. Serve it chilled, topped with your favorite fruits, nuts, or granola.

Notes

For added flavor, consider adding cocoa powder or fruit puree. Store in the fridge for up to 5 days and stir before serving.
