Main Ingredients
  • 8 oz cream cheese, softened Make sure it is softened for easy mixing.
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, drained
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 unit Juice of 1 lime
  • Salt and pepper to taste
For Serving
  • Tortilla chips Use gluten-free tortilla chips if needed.

Method
 

Preparation
  1. In a large bowl, combine the cream cheese and shredded cheddar until well blended.
  2. Fold in black beans, corn, diced peppers, red onion, cilantro, lime juice, and season with salt and pepper.
  3. On a piece of plastic wrap, shape the mixture into a log.
  4. Wrap tightly and refrigerate for at least 2 hours to firm up.
  5. Once set, unwrap and serve with tortilla chips.

Notes

Letting it sit for longer in the fridge can enhance the flavors. Feel free to add other vegetables like diced jalapeƱos for extra spice. For a smoother texture, you can blend the ingredients in a food processor.
