Prepare the Oven and Baking Dish
- Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish with butter or non-stick spray.
Prepare the Apple Filling
- In a large mixing bowl, combine the peeled, cored, and sliced apples. Add the granulated sugar, lemon juice, 1 tsp ground cinnamon, 1/4 tsp ground nutmeg, cornstarch, and 1/4 tsp salt. Toss gently until the apples are evenly coated. Pour the apple mixture into the prepared baking dish and spread evenly.
Prepare the Gluten-Free Crisp Topping
- In a separate medium mixing bowl, combine the gluten-free rolled oats, gluten-free all-purpose flour blend, packed light brown sugar, 1/2 tsp ground cinnamon, and 1/4 tsp salt. Stir to combine.
- Add the cold, cubed butter to the dry ingredients. Using your fingertips, a pastry blender, or a fork, cut the butter into the mixture until it resembles coarse crumbs with some pea-sized pieces of butter remaining. If using, stir in the chopped pecans.
Assemble and Bake
- Evenly sprinkle the gluten-free crisp topping over the apple filling in the baking dish.
- Bake for 45-55 minutes, or until the topping is golden brown and the apple filling is bubbly and tender when pierced with a fork. If the topping starts to brown too quickly, you can loosely tent the dish with foil.
- Remove from oven and let cool for at least 10-15 minutes before serving. This allows the filling to set slightly.
Notes
For an extra treat, serve warm with a scoop of vanilla ice cream, a dollop of whipped cream, or a drizzle of caramel sauce. Leftovers can be stored covered in the refrigerator for up to 3-4 days and reheated in the oven or microwave.
