Ingredients
  

For the Apple Filling
  • 6-8 medium apples Granny Smith, Honeycrisp, Fuji, or a mix, peeled, cored, and sliced 1/2-inch thick (about 6 cups)
  • 1/2 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2 tbsp cornstarch or arrowroot powder
  • 1/4 tsp salt
For the Gluten-Free Crisp Topping
  • 1 cup gluten-free rolled oats certified gluten-free
  • 1/2 cup gluten-free all-purpose flour blend ensure it contains xanthan gum or add 1/4 tsp separately
  • 1/2 cup packed light brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup cold unsalted butter 1 stick, cut into small cubes
  • 1/2 cup chopped pecans optional, for extra crunch

Method
 

Prepare the Oven and Baking Dish
  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish with butter or non-stick spray.
Prepare the Apple Filling
  1. In a large mixing bowl, combine the peeled, cored, and sliced apples. Add the granulated sugar, lemon juice, 1 tsp ground cinnamon, 1/4 tsp ground nutmeg, cornstarch, and 1/4 tsp salt. Toss gently until the apples are evenly coated. Pour the apple mixture into the prepared baking dish and spread evenly.
Prepare the Gluten-Free Crisp Topping
  1. In a separate medium mixing bowl, combine the gluten-free rolled oats, gluten-free all-purpose flour blend, packed light brown sugar, 1/2 tsp ground cinnamon, and 1/4 tsp salt. Stir to combine.
  2. Add the cold, cubed butter to the dry ingredients. Using your fingertips, a pastry blender, or a fork, cut the butter into the mixture until it resembles coarse crumbs with some pea-sized pieces of butter remaining. If using, stir in the chopped pecans.
Assemble and Bake
  1. Evenly sprinkle the gluten-free crisp topping over the apple filling in the baking dish.
  2. Bake for 45-55 minutes, or until the topping is golden brown and the apple filling is bubbly and tender when pierced with a fork. If the topping starts to brown too quickly, you can loosely tent the dish with foil.
  3. Remove from oven and let cool for at least 10-15 minutes before serving. This allows the filling to set slightly.

Notes

For an extra treat, serve warm with a scoop of vanilla ice cream, a dollop of whipped cream, or a drizzle of caramel sauce. Leftovers can be stored covered in the refrigerator for up to 3-4 days and reheated in the oven or microwave.
