  • 5 oz Canned Tuna in water or oil, well-drained
  • 1/4 cup Mayonnaise (or more, to taste)
  • 1/4 cup Celery finely diced
  • 2 tbsp Red Onion finely minced
  • 1 tsp Dijon Mustard
  • 1 tsp Lemon Juice freshly squeezed
  • 1/4 tsp Salt or to taste
  • 1/8 tsp Black Pepper freshly ground, or to taste
For Assembly
  • 4 slices Sourdough Bread or your preferred sandwich bread
  • 2 slices Sharp Cheddar Cheese or Provolone, Muenster
  • 2 tbsp Unsalted Butter softened

Method
 

Prepare the Tuna Salad
  1. In a medium mixing bowl, combine the well-drained canned tuna, mayonnaise, finely diced celery, minced red onion, Dijon mustard, and fresh lemon juice.
  2. Season with salt and black pepper to taste. Mix gently with a fork until all ingredients are well combined but still have some texture. Avoid overmixing to keep the tuna flaky.
Assemble the Tuna Melts
  1. Lay out the four slices of bread on a clean surface. Generously spread softened butter on one side of each slice. This will be the side that toasts in the pan.
  2. Flip two of the bread slices so the unbuttered side is up. Divide the tuna salad mixture evenly between these two slices, spreading it to the edges.
  3. Place one slice of sharp cheddar cheese on top of the tuna salad on each sandwich. If using thicker slices, consider two thinner slices for better melt.
  4. Top each sandwich with the remaining two slices of bread, buttered-side out.
Cook the Tuna Melts
  1. Heat a medium skillet or griddle over medium-low heat. Once hot, carefully place the assembled tuna melts into the skillet, buttered-side down.
  2. Cook for 4-5 minutes per side, or until the bread is golden brown and crispy, and the cheese is thoroughly melted and gooey. You may need to adjust the heat to prevent burning while ensuring the cheese melts.
  3. If the cheese isn't melting quickly enough, you can cover the skillet with a lid for the last minute or two to trap heat, helping the cheese melt more effectively.
  4. Once cooked, carefully remove the tuna melts from the skillet. Slice them in half diagonally for the classic diner presentation and serve immediately.
