  • 2 cups Cherry tomatoes, halved Substitutes: grape tomatoes or diced large tomatoes
  • 8 oz Fresh mozzarella, diced Substitutes: bocconcini or mozzarella balls
  • 1 cup Fresh basil leaves, torn Substitutes: mint for a twist or dried basil in a pinch
  • 2 tbsp Extra virgin olive oil Substitutes: light flavored oil
  • 2 tbsp Balsamic glaze Substitutes: balsamic vinegar with a touch of honey or sugar
  • to taste Salt and pepper Sea salt and freshly cracked pepper preferred

Method
 

Preparation
  1. Rinse the cherry tomatoes and basil leaves under cool water and pat them dry with a kitchen towel.
  2. Slice the cherry tomatoes in half or quarters, depending on their size.
  3. If using a large mozzarella ball, cut it into bite-sized pieces. If using mozzarella balls, simply halve them.
  4. Gently tear the fresh basil leaves into smaller pieces to release their aroma and flavor.
Combining and Dressing
  1. In a large bowl, combine the chopped tomatoes, mozzarella, and torn basil.
  2. Drizzle extra virgin olive oil and balsamic glaze over the mixture. Season with salt and pepper to taste.
  3. Gently toss everything together until well coated. Enjoy immediately.

Notes

Use the ripest tomatoes and the freshest mozzarella for the best flavor. Avoid dressing until just before serving for freshness. Consider adding avocado or arugula for extra flavor.
